  • Try making this artichoke salad with apples. A dish that combines artichokes with apples and Parmesan cheese has very interesting flavor notes. Here's a very simple salad recipe that I personally love. First, strip the outer leaves off the artichokes — they're usually tough and not good to eat. From the remaining leaves, tear off the tips and chop them finely. Mix lemon juice with water in a bowl and put the artichoke leaves in it; this keeps the leaves from browning in the air. Now make the salad dressing: squeeze the juice from the lemon and add olive oil and black pepper. On a cutting board, slice the Parmesan thinly. Peel the apple and cut it into small slices, then sprinkle it with lemon juice. Put the artichokes and apples in a salad bowl, pour over the dressing, salt it, and toss. Lay the cheese slices on top of the salad. To garnish, chop some green onion and sprinkle it over the salad. There — the artichoke salad with apples is ready. As you can see, it's all very quick and simple, but well worth it.
