Skillet Frozen Mushrooms with Potatoes

A great, hearty dish for anyone fasting, for vegetarians, and for mushroom lovers. A truly simple, filling dish — no fuss and no big effort in the kitchen. We always keep mushrooms in the freezer, and we try to stock up on peas too, since they round out this fragrant dish so nicely. Give it a try!

  • How do you make skillet frozen mushrooms with potatoes? First, peel the carrot, potatoes, garlic, and onion; it's best to thaw the peas and mushrooms ahead of time. Then: 1. Grate the carrot on the coarse side of a grater and cut the onion into small cubes. 2. In a hot skillet with vegetable oil, start frying the onion; once it softens, add the carrot. 3. Add the mushrooms to the cooked vegetables and fry until done — about 20 minutes. 4. While the mushrooms fry, work on the potatoes. Cut them lengthwise and fry on both sides until golden. 5. When the mushrooms are nearly done, add the peas and minced garlic, season with salt and spices to taste, and fry for no more than 5 more minutes. 6. Plate up a couple of pieces of potato and a couple of spoonfuls of the mushrooms. Pickles are a perfect match for this dish. Enjoy!
