When you are planning a long trip or a trip to nature, or just going to work; it is always nice to know that hunger will not catch you by surprise. To do this, there is a simple road meal – a sandwich or sandwich. Here is a cooking recipe that will come in handy for such cases.
To make sandwiches with fried eggplant, Mozzarella cheese and anchovies, take buns, cut in half, now cut the tomato into slices into 8 parts, eggplant, also cut into 4 parts. Cut the cheese into thin slices.
Preheat the oven to a temperature of 230 degrees. Foil or parchment paper can be placed on a baking sheet. Sprinkle a little oil on the paper. Next, put eggplants and tomatoes on a baking sheet. Then sprinkle the vegetables with oregano, salt and pepper. Put in the oven for half an hour. During the cooking process, you will need to turn the vegetables over once.
When the eggplants and tomatoes are ready, take them out of the oven and let them cool.
Next, pour a little olive oil over the halves of the buns and put a slice of tomato on each half of the bun. Let's add salt and pepper. Then cheese and anchovies, and then eggplant (you can also pepper a little) and cover with the second half of the bun. One sandwich is ready. In the same way, we "collect" all the other sandwiches until we use all the prepared products.
