A light, healthy salad of fresh vegetables and fruit. This cabbage-and-nut salad is really easy to make, and it turns out delicious. Finger-licking good!

    Add the mayonnaise, lemon juice, and salt to taste to the cabbage.

  • Spread the walnuts on a baking sheet and toast them in a preheated oven at 350°F (180°C) for about 5 minutes, then cool. Wash the apples and cut them into slices. Brush the apple slices with vegetable oil. Heat the broiler and put the apples under it for 2–3 minutes. Shred the cabbage and chop the walnuts. Combine the nuts, apples, and cabbage, then add the lemon juice and mayonnaise. Season with salt and pepper. Scatter the capers over the top and serve.
