Pancake Roll Appetizer

Pancake roll-ups filled with cheese and caviar — delicious and simple! A savory appetizer for a holiday table. These pancake rolls with cream cheese and red caviar are beautiful, tasty, and original — and very easy to make on top of it all.

    Gather all your ingredients. Have the ingredients for the pancakes at the same temperature — the batter will come out more uniform that way. I use wheat flour, but you can use any flour you prefer, such as buckwheat or rice. As for the caviar, the finer fish roe (red or black) is of course nicer, but work within your budget — any affordable fish roe will do: cod, pollock, or halibut.

    Beat the eggs into the milk and add the salt and sugar. Whisk until smooth.

    Sift in the flour. For airier pancakes, I really recommend sifting the flour — it aerates the batter.

    The batter should be medium consistency — not thick, but not runny either.

    Grease the pan with oil and heat it up well. To keep the pancakes from sticking and to bake them through, use the right pancake pan. A cast-iron skillet is ideal — cast iron conducts heat beautifully, so the pancakes bake evenly and don't stick. Pour in the batter and spread it across the pan. Cook for 2–3 minutes per side. The pancakes should be fairly sturdy, not thin.

    Let the pancakes cool, then spread cream cheese over about two-thirds of each one.

    Spread the caviar over the same two-thirds.

    Roll each pancake up tightly and chill in the refrigerator for a couple of hours.

    Slice into pieces about ¾ inch (1.5–2 cm) thick.

    Top with a little caviar and serve. Enjoy!

  • You don't have to make the pancakes with my recipe for this appetizer — feel free to use your own favorite. Just keep in mind they should be sturdy pancakes suitable for filling, not thin, holey ones. If the appetizer appeals to you but red caviar is on the pricey side, you can swap it for red fish: thinly slice the fish and lay it over the layer of cream cheese. Enjoy!
