Shrimp Pilaf

Add some variety to your menu with a delicious seafood pilaf! This shrimp pilaf is a great pick for seafood lovers — and anyone else at the table. For this recipe it's best to use a starchy Arborio rice and standard shrimp. The ingredient weights assume the shrimp are already peeled.

  • Ready to cook? Let's get started:
    • Peel the onion and cut it into small dice.
    • Peel the garlic and crush the cloves with the flat of a knife.
    • Sauté the onion and garlic in a mix of olive oil and butter.
    • After about three minutes, remove the garlic from the pan and add the rinsed rice.
    • Toast the rice for about 5–7 minutes, then pour in the dry wine (you can swap the wine for broth or water).
    • Add the salt, ground black pepper, and saffron, stir, and simmer until the rice is fully cooked.
    • Add the shrimp and cook for another 5 minutes.
    • Garnish the pilaf with fresh parsley and serve.
