Stewed zucchini with bell pepper

Absolutely light and incredibly delicious dish! Young zucchini with peppers in sour cream sauce with aromatic spices is a great option for dinner or a quick snack! A dish with vegetables in a spicy sauce will serve as an excellent addition to meat, chicken and fish.

    First of all, prepare all the necessary ingredients. Peel the onion, rinse under running water. Cut each onion in half, and then in slices, as in the photo.

    Wash the bell pepper, remove the seeds and stalk. Cut into half rings or large slices. For the brightness of the dish, it is better to use peppers of different colors.

    Wash the young zucchini (zucchini). Cut into medium-sized cubes. If you use a mature vegetable, then it is better to remove the peel and seeds beforehand.

    Prepare the sauce. In a small bowl, mix sour cream, salt and garlic passed through the press.

    Heat vegetable oil in a frying pan. It is better to use a frying pan with high edges, as there will be a lot of splashes when frying. Add the onion and, stirring continuously, cook until the onion is browned.

    Using a large spoon, remove the fried onion into a plate, leaving the oil in the pan.

    Toss the pepper in the oil in which the onion was fried. Stir continuously, fry until golden brown. Remove the pepper to the onion with a spoon.

    Put the zucchini in a frying pan and fry until golden brown.

    Remove the zucchini, drain the oil from the pan (or alternatively, then you can use other clean dishes for cooking). Send all the fried vegetables to a dry preheated frying pan.

    Then add sour cream sauce, a pinch of basil, sweet red pepper. If desired, you can use any favorite spices. Stir, reduce the heat to a minimum and cook under a closed lid for about three minutes. Then make the fire to the maximum, remove the lid and, stirring, cook for about 30 seconds- 1 minute.

A simple vegetable dish that is prepared in a matter of minutes. In summer, during the vegetable season, the recipe will serve as a lifesaver.


The finished dish can be left overnight in the refrigerator, and the next day enjoy a perfectly harmonious and delicious vegetable stew soaked in amazing sour cream and garlic sauce.
Before serving, sprinkle with finely chopped herbs and allspice.
