Step 1:
For pancakes, we take all the necessary products.

Cooking pancake batter. We drive eggs into a bowl for kneading dough. Add sugar.

Beat everything well with a mixer or blender with a whisk attachment. At the end of the process, add salt and beat a little more. We should have a lush mass.
Step 4:
Pour milk into the egg mass and mix a little more.
Step 5:
Pour in the sifted flour and mix again. Flour may take a little more, depending on its properties, add a little more if necessary, but the main thing is not to overdo it so that the pancakes remain thin.
Step 6:
Pour in the vegetable oil and mix for the last time. The dough is ready. Let it stand for a while (about 15-20 minutes, it is necessary for the development of gluten in the flour, otherwise the pancakes will tear).
Step 7:
Preparing a frying pan for frying pancakes. To do this, it must be thoroughly heated, greased with vegetable oil. Personally, I use a peeled half of a potato impaled on a fork for this. We collect the dough with a ladle from the very bottom so that the flour does not have time to settle. If it seems to you that there is not enough vegetable oil, you can add more. Pour a small amount of dough into the pan and turn it in different directions, evenly distributing the dough in a thin layer.
Step 8:
Fry the pancake on one side until browning and turn it over on the other. We finish cooking. We make a strong fire so that the pancakes do not have time to dry out. We use all the dough.
