Mushroom Crêpe Filling
Making crêpes? Don't forget a great filling! Mushroom filling is one of the tastiest around. Use any mushrooms you like — store-bought or wild both work. Wild mushrooms should be boiled first for safety; store-bought ones don't need any pre-cooking before frying. You can sauté the mushrooms in vegetable oil, but butter makes them far more tender and aromatic. This filling is rounded out with a little bacon and Parmesan.

- Both store-bought and wild mushrooms work for this crêpe filling. It's delicious with button mushrooms, honey mushrooms, or porcini — or use a mix of a couple of kinds. Fresh wild mushrooms are of course far more aromatic than store-bought, so the filling will be even tastier with them. 1) Clean the mushrooms, rinse them under running water, and trim the stem ends. Chop the prepared mushrooms finely. Wild mushrooms should be boiled in salted water for 20 minutes before chopping — drain, cool, and only then chop them. 2) Set a skillet over the heat, add the butter, and let it melt completely. 3) Add the mushrooms to the hot butter and season with salt and pepper. Cook over medium heat until all the moisture has cooked off and they take on a light golden color. 4) Peel the garlic, press it, and add it to the mushrooms. Dice the bacon and add it right after the garlic. Cook about one minute. 5) Wash the spinach, pat it dry with paper towels, and chop it finely. Add it to the pan and continue cooking over low heat for 1-2 minutes, just until it wilts. Don't cook it too long or the spinach will lose its color. Take the pan off the heat. 6) Grate the Parmesan finely, add it to the mushrooms, and stir quickly. The filling is ready! Wrap it up in fresh, golden crêpes and serve. You can dress the crêpes with any sauce you like, or just sour cream — though they're wonderful on their own!
