Step 1:
From this recipe you will learn how to cook squash caviar with tomatoes for the winter. We take the products according to the list.
Step 2:
Let's start with the tomato. We need to remove the skin from it, for this we make a cross-shaped incision on it and pour boiling water, keep it in boiling water for 1-2 minutes and remove the skin.
Step 3:
Cut the peeled tomato into a small cube.
Step 4:
Now we heat up the frying pan, pour a couple of tablespoons of vegetable oil into it and send our chopped tomato. Add a little salt, sugar, ground pepper to it (if desired, you can add a little dried basil and oregano) and fry until the excess liquid evaporates, about 5 minutes. Now add tomato paste to the tomato and mix everything well, our dressing is ready.
Step 5:
Let's do the rest of the vegetables. My zucchini, cut off the tips and cut into a small cube (everything will be prepared faster this way).
Step 6:
Peel and chop the onion.
Step 7:
Heat up another frying pan and send the zucchini into it, let it also be slightly dimmed (2-3 minutes). Add the onion and our tomato dressing to the zucchini, mix everything together.
Step 8:
Cover with a lid and simmer until tender (it took me about 15 minutes). Do not forget to stir the vegetables and at the very end add a little more salt, sugar, or rather what your taste lacks.
Step 9:
Our caviar is almost ready. Now let it cool down a little and grind it in a blender. Now our caviar is completely ready. It can be eaten immediately, or it can be closed for the winter in sterilized jars with a capacity of 0.5 or 1 liter and sent for storage in the basement.
