Homemade Pork-and-Beef Burger with Mozzarella

  • Slice the red onion into half-rings, the cucumber into thin rounds, and finely shred the lettuce. Finely chop the white onion (that one goes into the meat). Put the ground meat in a bowl, crack in the egg, add the chopped white onion, and season with salt and pepper. Cut the buns in half. Heat a skillet over high heat, add the buns cut-side down, and toast until golden — about 1–2 minutes per bun. Set the toasted buns aside. Heat a second skillet over medium heat, add the vegetable oil, and spread it around. Divide the meat into two equal portions and shape each into a patty slightly wider than the bun (roll a ball, then gently flatten it). Set a patty in the hot skillet and cook over medium heat for about 3–5 minutes. Flip and cook another 5 minutes. While the patties finish, build the base: spread 1 teaspoon of mayonnaise on the bottom bun. Layer on the iceberg lettuce, then the cucumber, onion, and 2 slices of cheese. Set the hot patty on the cheese, spread 1 teaspoon of ketchup over it, and cap with the top bun. Enjoy! You can use all beef or all pork for the patties. I used iceberg lettuce here, but any lettuce works. Swap in pickles for the fresh cucumber if you like. For the cheese, mozzarella or cheddar are both great (or any melting cheese you prefer — though I'd recommend one of those two). You can quick-pickle the topping onion 5–10 minutes ahead: put the sliced onion in a deep bowl with 0.25 teaspoon sugar and 0.5–1 teaspoon vinegar (amounts are for a quarter onion). Any onion works — red, white, or yellow. You can also add sliced tomato to the stack. If the meat is very fatty, cook the patties in a lightly oiled, preferably nonstick skillet so they're easy to flip and hold together.
