Classic Prague Salad

  • Start this delicious salad by rinsing the boneless pork, patting it dry with a paper towel, and setting it on a cutting board. Pound it lightly with a meat mallet. Peel the garlic and cut it into sticks. Set a skillet over fairly high heat, add the olive oil, and get it good and hot. Add the garlic and cook, stirring, until fragrant, then remove it from the pan. Add the pork and fry until golden brown, stirring now and then. Transfer the meat to a plate and season with salt, ground black pepper, and paprika, tossing so the seasoning coats it evenly. Once it has cooled a bit, cut it into sticks. Put the smoked brisket on a cutting board and cut it into sticks the same size as the fried pork. Thinly slice the gherkins. Wash and dry the apples, core them, then cut the flesh into matchsticks like the gherkins. Wash the green onion, lay it on paper towels, and blot dry. Slice the white part into rings and cut a little of the green as well. In a salad bowl, combine both meats with the green onion, gherkins, and apples. In a separate bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until well blended. Line serving plates with washed and dried lettuce leaves, mound the salad on top, and drizzle with the dressing — or serve the dressing on the side so it can be added just before eating. The salad is ready to serve. Enjoy!
