  • It's best to use herring fillets of a suitable size so you don't have to spend time preparing them. You'll want long strips of herring like these. Wash the bell pepper and cut it into pieces — you can stuff the olives with the smaller bits. Thread green olives, bell pepper and black olives onto the skewers, alternating them. Add anchovies wherever you like. Wrap an olive in a strip of herring and thread it onto the skewer. "Anchor" it with another green or black olive. Arrange the canapés attractively on a platter and serve.
