Shrimp with Rosemary

This shrimp recipe comes to us all the way from Thailand. Serve it hot with white wine or a cold beer.

    For this recipe you'll need large king prawns, already cooked. Take the shrimp out of the freezer, put them in a bowl, and pour in enough boiling water to cover them completely.

    Drain the water off the shrimp. Squeeze the lemons and pour the fresh juice over the shrimp. Strip the leaves off the rosemary sprigs. Peel and grate the ginger. Add these prepped ingredients to the shrimp and mix well. Let the shrimp marinate in the refrigerator for a couple of hours.

    Meanwhile, peel and mince the garlic as finely as you can. Set a skillet on the stove and pour in the olive oil. Heat it well and sauté the garlic. Add the marinated shrimp to the pan and let them cook for a few minutes.

    Add the soy sauce and sugar to the shrimp — a really interesting pairing. The soy sauce brings the flavor, and the sugar lets the shrimp caramelize a little. Drop in a pat of butter and sauté the shrimp, uncovered, for a couple of minutes.
