  • Here's a wonderful recipe I picked up on a forum devoted to all things connected with Bulgaria and its traditions. This bell pepper appetizer is also known as "Boats," because it's shaped like colorful little boats — a role played here by multicolored sweet peppers. For that, take red, yellow and green peppers, so the dish turns out really vivid. Wash the peppers well, cut each one lengthwise into several pieces and remove the seeds. These will be the hulls of our "boats." Now grate the peeled carrot on a fine grater. Do the same with the processed cheese. Combine both, then press the garlic in over them. Mix everything well and season with mayonnaise. Add one tablespoon of finely chopped parsley. Arrange the peppers on a platter and carefully spoon the cheese filling into each. A sprig of parsley stands in for the sail, completing the picture.
