- This affordable black caviar has won over a lot of people, myself included. Halibut roe is delicious not only on traditional open sandwiches but in all sorts of appetizers. A friend taught me how to make this gorgeous halibut caviar in cheese-and-cream on tartlets — her matchless canapés are practically legendary among our circle of friends, and her phone barely stops ringing with people angling for yet another of her recipes.
- First, in a blender I make a smooth mixture of freshly squeezed lemon juice and Yantar (Amber) cheese. Next, I whip half a cup of cream with a mixer, fold in the caviar, and combine both mixtures in the blender on the lowest speed. After that it's all very simple: I spoon the mixture into each little tartlet. You can garnish them with small pieces of lemon and herbs, or skip that — on their own, the black caviar pearls against the creamy filling already give the dish a refined, elegant look. You can also make this in small bread cups.
