Carp Roe Fritters with Sauce
Unusual and delicious fritters made from fish roe! Carp roe is a real delicacy — at least, that's what my family says. We absolutely love these roe fritters. They come out tender and soft, and they're so good for you! For kids who don't care for fish, these fritters are a real find. Serve them with a mayonnaise and sour cream sauce, which makes them even more tender and tasty!

Gather your ingredients.

Rinse the carp roe well and clean it of membranes and any blood.

Leave it in a sieve for 5 minutes to let the water drain off.

Transfer the rinsed roe to a bowl, add salt and pepper to taste, a pinch of baking soda (it makes the fritters fluffier), and the eggs.

Mix the "batter" thoroughly. I do this by hand — it's easier to mash the roe and blend everything together, but you can use a spoon, whatever works for you. Let the mixture rest for 5 minutes.

Pour vegetable oil into a skillet, heat it, and spoon out the fritters. Keep the heat just below medium — not too high. They fry quickly. As soon as the edges set and turn golden, flip them over.

Cook the other side until done.

Then cover with a lid for a few seconds to let them steam.

While the fritters fry, make the sauce. In a small dish, mix equal parts sour cream and mayonnaise, season with pepper to taste, and stir in chopped dill.
