- For these pies we'll make a sponge dough. Combine warm water with the yeast and flour so the mixture reaches a pancake-batter consistency. 2. Leave the dough out, and once bubbles start to appear on the surface, add the rest of the ingredients. 3. Add the salt and sugar, and stir until dissolved. Work in the remaining sifted flour and 2 tablespoons of vegetable oil. Knead the dough and let it rise twice. 4. Divide the dough into ropes and cut them into equal pieces. Roll out each piece with a rolling pin, place jam in the center, and pinch the edges very tightly to seal. 5. Fry the pies in a preheated skillet with oil.
