Classic khvorost with kefir
Make an aromatic treat to go with your morning cup of coffee! Sometimes I let myself have just a cup of coffee for breakfast—though never without a cookie or something like a slice of cheesecake or a piece of khvorost. Today I'm sharing a recipe for the last of these: delicious, simple crispy fried dough ribbons you can make for an evening tea and save a couple of for breakfast.

- Crack the eggs into a deep bowl, add the sugar, and beat with a mixer until they form a stiff foam.
- Pour in the kefir, add the vanilla sugar, and blend with the mixer for about a minute.
- Add the sifted flour and knead a soft dough.
- Roll the dough out into a thin sheet and cut it into strips (4–5 cm wide), then cut each strip into pieces (10–13 cm long); make a diagonal slit in the center of each piece and pull one end through it.
- Pour the vegetable oil into a small deep skillet and heat over medium.
- Drop the pieces into the hot oil and fry on both sides. Khvorost cooks very fast—about a minute.
- Lift out the finished treats (I use kitchen tongs—handy) and set them on paper towels to drain the excess oil.
- Once cooled, dust the khvorost with powdered sugar, arrange on a plate, and serve.
- Enjoy your tea!
