Nalistniki Baked in Sour Cream

Soft and sweet, gently baked in sour cream... So good! Everyone loves nalistniki, especially with farmer cheese. The crêpes come out wafer-thin, the filling is tender — just unbelievably delicious! A true classic of Ukrainian and Belarusian home cooking.

    1. Using a blender, beat the eggs with the sugar and salt into a stiff foam. Pour in the warmed milk and sift in the flour together with the baking soda. Blend until smooth. Add the lemon juice, mix, then pour in the vegetable oil. Pour some batter onto a hot, oiled skillet and swirl it across the surface by tilting the pan side to side. Cook on both sides over medium heat until golden. 2. Now for the filling: cover the raisins with warm boiled water and let them sit for 5–10 minutes; put the farmer cheese in a deep bowl; crack in the eggs; add the regular and vanilla sugar and mix (blend it if you'd like a smooth, non-grainy filling); drain the raisins and squeeze out all the liquid; stir the raisins into the cheese mixture. Fill and fold the cooled crêpes however you like — for example, cut a crêpe into 4 wedges, put filling in the middle of each triangle, and roll up a small, pretty nalistnik. Set one whole crêpe aside. Grease a deep baking dish with butter and lay the whole crêpe in the bottom, brushing it with butter too. Arrange the filled nalistniki on top; brush each layer with butter, sprinkle with sugar, and spoon over sour cream. Cover the dish and bake the nalistniki in the sour cream at 320°F (160°C) for about 1 hour (the sour cream should just start to bubble). Turn off the heat and leave the dish in the oven another 15–20 minutes. Serve the nalistniki warm, drizzled with sour cream and honey — or dress them up however you like! Enjoy!
