- Grind the beef through a meat grinder. Cut the bacon into small dice. Grate the carrot; peel and finely chop the onion. Blanch the tomatoes in boiling water, peel off the skins, and chop them finely. Fry the bacon in a skillet to render out the fat. Remove the crisp bits, and in the rendered fat sauté the onion until lightly golden. Add the chopped celery and grated carrot to the onion, cook 5 minutes, then add the ground beef. Cook everything another 7–8 minutes, then add the finely chopped garlic, black pepper, nutmeg, and salt, and pour in the dry wines. Simmer the Bolognese, covered, for 15 minutes, then stir in the finely chopped parsley, add the tomato pulp and the broth (or water), and simmer over the lowest heat. The sauce shouldn't boil — it should barely bubble, and the longer the better. Don't forget to stir, topping up with broth (or water) as needed. Half an hour before it's done, stir the milk into the Bolognese (and some dried herbs too, if you like). Toss the finished sauce with your favorite pasta and dig in!
