Bolognese sauce with tomato paste

Prepare an amazingly delicious sauce for lasagna and more! This sauce, called bolognese, is not so difficult to cook. The only thing is that it will take 2.5-3 hours to cook, although they are quite justified, because the taste of the finished dish captivates from the first spoonful.

Using a blender, chop the tomatoes to a puree state.

Cut bacon, carrot, onion and celery into small cubes. Finely chop the garlic.

Heat up two thirds of the vegetable oil, fry the minced meat for 5-7 minutes until it becomes crumbly. We transfer the minced meat to a separate plate.

Add the remaining vegetable oil and fry the bacon pieces on it for 4 minutes. When the bacon turns golden, add onion, celery and carrot, fry for 5-7 minutes, then add garlic, stir and fry for another 1 minute.

At this stage, we introduce the prepared minced meat, pour in the wine and keep it on fire for some more time to evaporate the alcohol. Then spread the chopped tomatoes and tomato paste, mix and bring to a boil. Next, add oregano, pepper, thyme, salt and sugar. Stir, add the broth (or water), continue to simmer for an hour and a half under a closed lid on low heat (the sauce should boil slightly).

After this time, open the lid, pour in the milk, stir and simmer for half an hour until thickened.

The wonderful sauce is ready!
