Bolognese Sauce with Tomato Paste

Make an amazingly delicious sauce for lasagna and beyond! This Bolognese isn't hard to put together. The one catch is that it needs 2.5–3 hours to cook — but they're well worth it, because the flavor of the finished dish grabs you from the very first spoonful.

  • Purée the tomatoes in a blender. Cut the bacon, carrot, onion, and celery into small dice. Finely chop the garlic. Heat two-thirds of the vegetable oil and fry the ground beef for 5–7 minutes, until it's browned and crumbly. Transfer it to a separate plate. Add the rest of the oil and fry the bacon in it for 4 minutes. Once the bacon turns golden, add the onion, celery, and carrot, cook 5–7 minutes, then add the garlic, stir, and cook 1 more minute. Now return the beef to the pan, pour in the wine, and keep it over the heat a while longer to cook off the alcohol. Add the puréed tomatoes and the tomato paste, stir, and bring to a boil. Add the oregano, pepper, thyme, salt, and sugar. Stir, add the broth (or water), and keep simmering, covered, over low heat for an hour and a half (the sauce should barely bubble). After that, uncover, pour in the milk, stir, and simmer 30 minutes more until thickened. Your wonderful sauce is ready! Use it with pleasure — and keep sharpening those cooking skills!
