Oven-Roasted Pastroma (Pork)

A delicious cold-cut appetizer for a holiday spread. So good! A very tasty pork appetizer. You can improvise with the spices to add new savory notes. No holiday in our house is complete without pastroma. Family and guests alike always love it!

    1. Dissolve the salt in the water and brine the meat in the solution for 3 hours. 2. Once the time is up, blot off the excess moisture with a paper towel. 3. Mince the garlic and combine it with the spices, oil, and vinegar. Mix well. 4. Rub the marinade all over the meat, wrap it in parchment paper, then wrap that in foil. 5. Preheat the oven for 15 minutes at 480°F (250°C). Cook the meat for 20 minutes, then leave it in the oven — without opening the door — until the oven has completely cooled. 6. Let the meat cool fully, then refrigerate it, still wrapped, for 10–12 hours. Enjoy!
