Satsivi Sauce

Make an original, delicious sauce for all kinds of dishes! I'll admit right off the bat that sauces are my weakness. They give any dish a distinctive touch and bring out the many layers of flavor in meat. Georgian cuisine is famous for its sauces, and this recipe was born there. Traditionally, Georgian cooks grind all the ingredients by hand with a mortar and pestle — but satsivi tastes just as good if you use a blender.

  • Here's how to make the sauce: — sauté the finely chopped onion in butter until golden; — using a blender, grind the walnuts into fine crumbs, then blend in the sautéed onion; — combine the walnuts and onion and season with salt; — pour the chicken broth into the mixture and add the grated garlic; — simmer for 20 minutes; — stir in the seasonings and vinegar and simmer for another 2-3 minutes. (Khmeli-suneli is a classic Georgian spice blend.) Enjoy the wonderful flavor satsivi sauce brings to your dishes!
