Beef Meatballs in Tomato–Sour Cream Gravy
Grandma's meatball recipe, just like childhood! Save it, make it — it's so good! These are the meatballs not just we remember, but our moms and dads too. A sauce of sour cream and fresh tomatoes makes them wonderfully tender, juicy, and fragrant!

- Soak the pieces of bread in the milk. Cut the meat (fattier is better) into pieces and peel the onion. Grind all of it together into ground meat. Mix well, salting as you go, then knead the mixture firmly. 2. Score a cross in the bottom of each tomato and pour boiling water over them. After 10 seconds, drain and peel off the skins. Purée the tomatoes however you like — with a fork, blender, meat grinder, mortar and pestle, or potato masher. Add a pinch of salt to the tomato purée. Pour it into a skillet and cook over low heat for 5-7 minutes. Then stir in the sour cream and cook for another 10 minutes. 3. Shape the ground meat into meatballs, dredge them in flour, and fry them in an oiled skillet on both sides until golden. 4. Add the finished meatballs to the sauce along with the herbs and a bay leaf. Cover and simmer over low heat for 30 minutes. If the sauce reduces too much, add a little water. These meatballs and gravy are delicious served over rice, mashed potatoes, or pasta. Enjoy!
