Pan-Seared Beef Cutlets in Mushroom Sauce
Superb cutlets for anyone who wants only the best! This recipe is incomparable. A friend once shared it with me after she came back from the States, where she first tried the dish at a restaurant. Then, through a bit of kitchen experimenting, we recreated it — and it's actually very simple.

- Bring the maple syrup to a boil and cook over low heat until it starts to thicken. 2. Pour in the cognac and keep it over the heat until the liquid has almost completely evaporated. 3. Add the broth and mushrooms. Bring back to a boil and simmer over low heat until the sauce reaches the thickness you want. 4. Lay the pieces of beef on a cutting board and pound them lightly. 5. Season the cutlets with salt and pepper. 6. Dredge them lightly in flour and sear each side in a skillet for 1 minute over high heat. 7. Then transfer the cutlets to the skillet with the sauce and heat them through to your desired doneness. Serve the cutlets with the sauce. Pasta or steamed vegetables make a perfect side. Enjoy!
