- The recipe is very simple. 1. Heat both oils in a skillet. Chop the garlic, chili pepper, and celery. 2. Fry the vegetables one type at a time over high heat until golden, seasoning as needed, then transfer each batch to a deep bowl, leaving the oil in the pan. At the very end, sprinkle everything with oregano. Here's the order: string beans, fried 2-3 minutes, with a little salt; then cauliflower, fried 3-4 minutes, with a little salt; then baby (or regular) carrots, fried 4-5 minutes, with a little salt; then green peas, fried 1-2 minutes, with half the garlic and chili added; then corn, fried 1 minute; and finally celery, adding the rest of the garlic and chili plus a little salt. If you run low on oil, add a little more. Feel free to use whatever vegetables you like. Serve the skillet vegetables hot. Enjoy!
