Grilled Dorada (Gilt-Head Bream)

Dorada is the perfect fish for anyone watching their waistline! All our lives we look for recipes that won't add inches to our waist and still taste great. Grilled dorada is exactly the dish that stands in for fatty grilled meats when I'm out in nature. I even managed to win a couple of friends over to my "fish" side :) It's a very simple, quick recipe. The main thing is a good, hot fire — but that's not my department ;)

  • Any fish needs to be prepped before cooking. Scale it, remove the innards, and don't forget the gills; cut off the fins and tail as well. To marinate, place the fish in a container and pour lemon juice over it, then sprinkle salt, pepper, and rosemary over both sides and inside the fish. You can let it marinate for an hour or two, or as long as a full day. After marinating, go ahead and move on to the most exciting part — the grill. Brush the grate with oil, lay the fish on it, and cook over hot coals until golden on both sides. Watch it closely — fish cooks fast: with a good, hot fire, it can take just a few minutes.
