Egg-Free Vegan Mayonnaise in a Blender

A natural, wholesome sauce in 5 minutes! This recipe is for anyone who, for whatever reason, doesn't eat eggs. You can make this egg-free blender mayonnaise ahead of time or right before serving. By adjusting the proportions, you can dial in the sauce exactly how you like it.

    How do you make egg-free blender mayonnaise? Prepare all the ingredients. To get the juice easily, choose a nice juicy lemon. Use a mustard you trust - it has a big effect on the flavor of the finished mayonnaise.

    Sift the flour into a small saucepan (no larger than 2 liters). Sifting removes any small debris. Add about half a cup of water and stir until smooth, with no lumps. A whisk is easiest for this.

    Put the pan over medium heat and, stirring constantly, bring it to a boil. Lower the heat a little and cook until the mixture thickens, stirring the whole time. For thicker mayonnaise, cook it longer. Keep in mind that the flour paste thickens further as it cools. Cool it to room temperature.

    Put the remaining ingredients in a blender cup or a deep container that's easy to blend in.

    The finished mayonnaise keeps for several days in the fridge in a sealed container.

  • This amount of ingredients makes about 400 ml (1 2/3 cups) of mayonnaise.
  • When I make this mayonnaise, I add less salt and mustard.
  • Since everyone's tolerance for salt, sweetness, bitterness, heat, acidity, and spice is different, always add spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some are especially easy to overdo (chili pepper, for example).
  • You can use a sugar substitute instead of sugar.
