  • I generally prefer eating and making vegetable salads, since they're wholesome and tasty. I know a lot of recipes for them. I have a special fondness for all kinds of root vegetables. Today I'd like to share a recipe for a salad of fresh carrot and beet. First, rinse the carrot and beet under running water and peel them. Now grate the vegetables using a food processor or a coarse grater. Transfer the prepared root vegetables to a salad bowl and add the chopped green onion and ground nuts. Now mix together the honey, yogurt, ginger and chili. Combine everything. Then set bottomless ring molds on individual plates, fill them with the salad, and lift the molds away. You end up with the salad shaped into a circle, a triangle, or whatever shape you have on hand. Finish by garnishing the salad with a sprig of greens — parsley or dill.
