  • Pineapple dishes can be sweet or savory, because pineapples and bananas are used in recipes both as vegetables and as fruit — that's the quirk of these tropical fruits. The salad I want to share with you is a savory one, and one of its ingredients is bacon. Put the bacon in a deep bowl, add a little water, and cook it until evenly light brown. Then drain the water, crumble the bacon into small pieces, and set it aside. Into a jar with a lid, pour the pineapple juice, white wine vinegar, oil, pepper and salt. Close the jar tightly and shake until the dressing is uniform. Finely chop the lettuce, dice the pineapple, and chop the nuts and green onion; add the bacon to them. Pour the dressing over and toss in the bowl for a while so the dressing soaks evenly into all the ingredients. Transfer to a salad bowl and sprinkle with coconut flakes. This salad is great on its own as an appetizer. The recipe serves six.
