Bean and Mushroom Stew

Looking for a meatless main? Add this delicious stew to your rotation! I built it around two of my favorite plant proteins — beans and mushrooms. They're satisfying and full of energy, yet light and easy to enjoy. Dig in!

Cooking method

    Gather the ingredients — I cooked the beans ahead of time until tender.

    Chop the onions.

    Slice the mushrooms.

    Lightly sauté the onion.

    Add the mushrooms and sauté lightly as well.

    Do the same with the bell pepper.

    Stir in the tomato sauce and season with salt to taste.

    Add the pre-cooked beans and stir to combine.

    Cover and simmer for 15 minutes.

    Serve with any side you like — I suggest a bed of sauerkraut.
