- The recipe is very short, simple, and low in calories, and all the cooking comes down to just a few steps. In order: stir the sparkling water together with the salt, sugar, and vegetable oil. Mix with a spoon, gradually adding the flour. You want the batter thick — about the consistency of light (10%) sour cream. From there it's easy if you've made crepes before: pour some batter into the skillet, cook the crepe and flip it, pour again, and keep going until the batter is used up.
