Cooking method
- Rinse and pat the chicken breasts dry. Slice each one lengthwise and open it out like a book. Season the inside with salt and pepper. For the filling, layer in sliced rounds of tomato and basil leaves. Close the breasts and pin the edges shut with a toothpick. Pan-fry in vegetable oil for five minutes per side. When done, the chicken should be opaque all the way through at the cut, with no trace of pink.
