  • For baked pork, pork neck (collar) is your best bet; you can also use ham or shoulder. Cut each garlic clove lengthwise into 3–4 slivers — you'll use these to lard the meat. The amount of garlic is approximate; just use enough to stud the whole roast. With a sharp knife, make cuts in the pork every 2–4 inches and tuck a garlic sliver into each one. Set the pork on a sheet of foil. Stir together the mayonnaise, salt, mustard, and pepper, then rub the mixture all over the meat and scatter any remaining garlic on top. Wrap tightly in several layers of foil and bake for 1 1/2 hours in an oven preheated to 350°F (180°C). To get an appetizing crust, turn the heat up to 425°F (220°C), open the foil, and baste the pork with the juices that have collected. Keep basting until a browned crust forms — this can take about half an hour. Baked pork is good served both hot and cold, and it comes out wonderfully fragrant and tender. Serve it with vegetables and fresh herbs on the side.
