Cooking method
- Knead a firm dough, like the kind you'd use for dumplings, and refrigerate it for 1 hour. Make the filling from pork, onion, and garlic — ideally hand-chopped, though I "chopped" the meat, onion, and garlic in a food processor and it came out great. Add seasonings and salt, then stir a few spoonfuls of chicken broth into the filling. Roll the dough out very thin and cut it into squares. Place a teaspoon of filling in the center of each square, pinch the edges together into a little boat shape, and arrange them in a buttered baking dish. Fill the dish with the boats and dot the tops with a few pieces of ghee or butter. Bake in an oven preheated to 350°F (180°C) for 15–20 minutes. As soon as the tops are golden, pour chicken broth over the boats and return them to the oven until the broth is fully absorbed.
