Salad of Boiled Red Beans and Carrots
Affordable ingredients and minimal prep time. A very tasty, filling salad. Despite its simplicity, this is the most-loved salad in our family. This bean salad disappears fast, even at holiday spreads.

Step 1:
For a salad of boiled red beans and carrots, you'll need 100–150 grams of dried beans, three medium carrots, 1–2 cloves of garlic, croutons and mayonnaise. To make the salad healthier and tastier, it's best to dress it with your own homemade mayonnaise. The croutons can be store-bought or made yourself.

It's better to soak the beans before cooking — for at least two hours, or preferably overnight. This shortens the cooking time. Then rinse the beans and cook them for about an hour. Salt them about 10 minutes before the end of cooking.

Once the beans are cooked, leave them in their cooking water for about half an hour.

Then drain the water and let the beans cool.

Peel and wash the carrots and grate them on a medium grater. Add spices (I use ground black pepper), salt, and mix well.

In a deep bowl, combine the boiled red beans, the grated fresh carrot, and white-bread croutons (mine were garlic-flavored).

Step 7:
Press one clove of garlic into the boiled red bean and carrot salad. Add the mayonnaise and mix well.
- A salad of boiled red beans and carrots has lots of variations, swapping out and adding different ingredients. Beans and carrots stay the constant base.
- You can add croutons, smoked sausage or cheese to the beans and carrots. The garlic can be swapped for onion (either pickled or sautéed in a little vegetable oil). You can use canned beans for the salad, since they require no prep time, but it's healthier and tastier with boiled beans. And if you use ready-made croutons in different flavors, the salad will have a fresh, original, zesty note every time.
- You can make the croutons yourself. It's best to use sandwich bread or a sliced loaf, since they crumble less when cut. Toast the sliced bread in a dry pan or dry it out in the oven.
