Cooking method
- Rinse and pat the chicken livers dry, trimming off any extra membranes as needed. Cut them into large pieces. Sear them in a hot skillet in vegetable oil until browned. Add the pumpkin, cut into pieces. Season with salt and pepper, cover, and braise for 20 minutes. Rinse the grapes, halve them, and remove the seeds if there are any. Line a plate with lettuce leaves. Add the warm liver and pumpkin. Scatter the grape halves on top, drizzle with the vinegar, and sprinkle with sesame seeds. Serve the chicken liver salad in individual portions, warm.
