  • Honestly, I'm not sure whether trout actually swim in Lake Issyk-Kul, but the fish is cooked its own special way in Kyrgyzstan. Here's a recipe that lets you make it truly Kyrgyz-style — I recommend it to everyone, it's genuinely delicious. First, rinse and clean the trout, then rub it all over with salt and pepper. Dredge the fish in a little flour and set it in a skillet with hot oil. Fry on both sides until it takes on a golden crust. Now move the trout to the oven to finish cooking through. Meanwhile, chop the onion, radish, and bell pepper. In a separate skillet, heat some oil and fry the onion briefly, add the radish, and cook, stirring, for 5 minutes. Stir in the bell pepper and tomato paste, and after another 7–10 minutes pour in the broth. Simmer this sauce for 5–7 minutes more, then take it off the heat. Arrange the fish on a serving plate, spoon the sauce over the top, and surround it with green peas, chopped tomatoes, and fresh herbs. Your Issyk-Kul-style trout is ready — enjoy!
