- This recipe makes a single serving of a wonderful Tatar dish called kalzha. Start with boneless beef (or horse meat, if you can find it) along with a piece of lamb brisket. Trim off the excess fat and membrane, then cut the meat so you end up with a thin sheet about 3/4 inch (2 cm) thick. Season the sheet with salt and pepper, sprinkle on 2–3 drops of vinegar, and chill it in the refrigerator for a while. Take the meat back out, season lightly with salt and pepper once more, scatter crushed garlic over it, and rub it in well. Roll the seasoned meat up like a sausage and tie it with kitchen twine. Fry the roll in a skillet until it's about half cooked. Transfer it to a deep pot, add broth along with chopped onion, peeled and grated carrot, and a couple of bay leaves. Cover and simmer until tender, about half an hour. This Tatar dish is best served chilled — your kalzha is ready! Scatter chopped fresh herbs over the top and serve with bread. Enjoy!
