- We first tried this sausage at a wedding in Estonia. It's actually called "Estonian wedding sausage," and we make it at home fairly often. The recipe was given to me by the bride's mother from that very wedding. Start by making an omelet: crack the eggs and pour in the milk. Add a pinch of salt and some ground black pepper on top, then beat with a mixer or in a food processor. Set a skillet over the heat and add a little butter. Wash, peel, and chop the onion — you can use either yellow or green onion. Add it to the skillet, sauté, then pour in the omelet mixture and cook until set. Now take the beef and pound it well into a wide, thin sheet about the size of a sheet of paper. Lay the onion omelet and the ham on top of the meat. Roll the meat up and tie it tightly with kitchen twine — you should end up with a sausage-shaped log. Fry it in pork fat until the meat is cooked through. Let the finished Estonian wedding sausage cool, remove the twine, and slice it like an ordinary sausage. It pairs well with any side dish and is great on sandwiches. Enjoy!
