In Estonia, we tried this sausage at a wedding. It's called "Estonian wedding sausage", but we make it quite often at home. The recipe for this sausage was given to me by the bride's mother from that wedding.
First you need to make an omelet. We break the eggs and pour milk into them. Sprinkle everything on top with one pinch of salt, ground black pepper. Beat with a mixer or in a food processor. We put the frying pan on the fire. We put butter on it. Wash, peel and cut the onion. You can use both onion and green. We put it in a frying pan, fry it and pour the mass for the omelet. Fry it until cooked.
we take beef meat. We beat it well to get a wide layer, similar to a standard sheet of paper. We take an omelet with onions and ham. We put them on the meat. We wrap the meat and tie it tightly with a thread. You should get a stick of sausage. We take it and fry it until the meat is ready in pork fat. We cool the finished Estonian wedding sausage, remove the thread and cut it like a regular sausage. Such food is well suited to any side dishes, as well as sandwiches.
