American Pancakes with Milk

Real American pancakes made with milk! I once got to try a "pancake" at a café — basically milk pancakes, something between a thin crêpe and a fluffy fritter. I loved it like crazy and went hunting everywhere for the recipe. When I finally found it, I couldn't believe my eyes… it's so simple! There's really nothing to it. No wonder they say the best things are the simplest.

    Take the butter out of the fridge ahead of time so it can come to room temperature and soften.

    Pour the milk into a large, deep bowl.

    Whisking as you go, add the eggs and butter.

    Don't forget the baking soda (slaked with the vinegar) and the starch stirred into the sour cream — that's what makes the pancakes light and bubbly!

    There shouldn't be a single lump in the batter — a blender is ideal for this.

    The batter shouldn't be runny — it should be more like the consistency of sour cream.

    Now fry them. Grease the skillet ONCE with butter (no more oil during cooking) and heat it well. Scoop the batter with a tablespoon and pour it slowly — that's how you get perfectly round pancakes.
