Moldovan Plăcinte

A wonderful savory pastry for everyday meals or a festive table. My mom introduced me to this recipe back when I was a kid — she'd learned to make these lovely little pies from relatives in Moldova. My mom loves plăcinte with apples, which is what we always made, but authentic Moldovan plăcinte come with all kinds of fillings: raw pumpkin grated with sugar, cottage cheese, or boiled potatoes mashed with onions fried in lard.

Cooking method

    Let's start with the dough.

    Take flour, water, a pinch of salt, and vegetable oil, and knead them into a dough.

    Refrigerate it for half an hour.

    Meanwhile, make whatever filling you like. You can mash homemade cottage cheese with chopped herbs and a little salt, or boil potatoes

    and mix them with fried onions. Or simply grate apples or pumpkin and mix with sugar.

    Take out the dough and cut it into small pieces. Roll each one out very thinly and place the filling right in the center.

    Cut the dough as shown in the picture and fold it around the filling.

    Then very gently roll it out to the size of your skillet.

    Fry the resulting flatbread on both sides in vegetable oil. Enjoy!
