Wash the eggplants thoroughly and let them dry for 15 minutes
Cut off the eggplant tails and cut lengthwise.
In a separate bowl, mix lemon juice and finely chopped herbs, salt
and pepper. This mixture will be used in cooking as a marinade.
Put the eggplants on the grill, pre-greasing them with marinade.
The grill grate must also be greased with vegetable oil so that the eggplants do not stick to the grill.
Before each turn of the eggplant, it should also be lubricated.
After the eggplant is cooked, you need to remove the skin from it, which will make it taste more tender (I did not remove the skins).
Fry the tomato cut in half on the grill and turn it into a paste in a blender with salt and pepper.
Put eggplants on a plate, pour tomato paste, sprinkle with grated cheese and crushed garlic.
I served them rolled up in tubes with sauce inside. I didn't add cheese, it was delicious for me anyway. =)
