Fried gnocchi with greens and white beans

This dish is worth tinkering with! I made this recipe for my parents, and my mom made me save the recipe. She told my sister about it, and now I have to cook this dish for her when she comes to visit. One of the best and easiest recipes I've ever used.

Cooking method

First we prepare Gnocchi: 1 kg of potatoes are washed, boiled in salted water, cleaned and mashed. Puree lightly salt and knead, gradually adding flour (it will take 250 grams of flour per 1 kg of potatoes) until a smooth homogeneous dough forms, it should not stick to your hands. Roll out the dough into a tube with a diameter of 2 cm, roll in flour and cut into pieces 2-3 cm long. If desired, you can give a pattern - put each piece on a fork and press down to make transverse strips.
Now we make delicious gnocchi. To do this, heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add our gnocchi and cook, stirring, until a beautiful ruddy crust begins to form, from 5 to 7 minutes. Transfer to a bowl.
Add the remaining 1 teaspoon of olive oil, onion to the frying pan and fry, stirring, over medium heat for 2 minutes. Next, add garlic and a little water. Now cover with a lid and let it simmer until the onion becomes soft, from 4 to 6 minutes. Now it's the turn of the beetroot or spinach leaves (you can do both), add to the onion and garlic and simmer, stirring, until the leaves begin to wither, from 1 to 2 minutes. And now tomatoes, beans and pepper and bring to a boil. Spread to the resulting gnocchi sauce, sprinkle with mozzarella cheese and parmesan. Cover again and cook until the cheese melts, about 3 minutes. Our gnocchi are ready to serve! The dish is not only delicious, but also healthy, as it contains vitamins A (50%) and C (40%), calcium and iron (19%).
