Cooking method

Cooking time: 50 min
  1. Step 1:

    Step 1

Gather your ingredients for pan-fried banana fritters. You'll need medium-ripe bananas, milk, all-purpose flour, a little turmeric and ground cinnamon, plus vegetable oil for frying and powdered sugar to finish.

  2. Step 2:

    Step 2

First make the batter (a thick batter, about the consistency of medium-fat sour cream). In a bowl, combine the sifted flour, turmeric (it lends a light golden tint), and ground cinnamon (for flavor and aroma). Stir together.

  3. Step 3:

    Step 3

Add the milk a little at a time, stirring constantly. The batter will be very thick at first but will loosen as you add more milk. Adding the liquid to the dry ingredients gradually helps you avoid stubborn lumps.

  4. Step 4:

    Step 4

Carefully peel the bananas and cut them into rounds about 1/2 inch (1 cm) thick. Heat plenty of vegetable oil in a skillet. Using two forks, dip each round in the batter, then lower it into the hot oil.

  5. Step 5:

    Step 5

Fry the battered bananas over fairly high heat until golden. Transfer the fritters to paper towels to drain off the excess oil. Serve right away, while the coating is still crisp. Dust with powdered sugar just before serving. Enjoy!

  • Be careful when turning the fritters - the banana juice can spatter! Fry over fairly high heat so the batter sets quickly instead of running off into the pan. Choose bananas that aren't green, so the fritters come out sweet, but not overripe either, or the flesh will turn mushy. Besides powdered sugar, you can garnish the finished dish with fresh mint or lemon balm leaves.
