Fried Cabbage Hand Pies (Kefir Dough)

Delicious fried cabbage hand pies! The dough is yeast-free—give it a try! Yeast dough and I never quite got along, but my mom taught me to make pies with kefir dough instead, and they turn out wonderful—especially fried. Cabbage is my favorite filling, so that's the one I share here, but you can use any filling you like, sweet ones included.

    1. Pour the kefir into a bowl and add the baking soda, salt, and sugar. Stir and let it sit for 5–10 minutes. 2. In a separate container, whisk the eggs with the vegetable oil. 3. Pour the egg-and-oil mixture into the kefir and stir. 4. Sift the flour and add it in small portions, kneading into a dough. It should be soft and not sticky. 5. For the filling, shred the onion and cabbage. 6. Heat vegetable oil in a skillet, add the onion, and fry until golden. Add the cabbage, stir, and cook until nearly tender. If the cabbage isn't very juicy, add a splash of milk. Season with salt and pepper. 7. Divide the dough in half, then cut each half into smaller pieces and roll them into balls—about 12 total. 8. Roll out each ball, put filling in the center, and pinch the edges closed to form a pie. 9. Do the same with the rest of the dough. 10. Fry the pies in vegetable oil on both sides until cooked through, golden, and crisp. 11. Drain the finished pies on paper towels to soak up the excess oil. Enjoy!
