Step 1:
Prepare the ingredients. Mix kefir with water and heat it up slightly. In the bowl in which you will cook the dough, put salt, sugar, egg. Mix it up.
Step 2:
Pour warmed kefir. Stir thoroughly until foam appears on top.
Step 3:
Then add flour. It is better to add flour gradually to make it easier to mix. Stir thoroughly so that there are no lumps. For mixing, I use a whisk - it quickly mixes and breaks the lumps.
Step 4:
IMPORTANT: You should get a thick mass that does not drain from the spoon, but comes off with a viscous, thick mass. If the mass is not thick, then add more flour and bring the mass to a thick state. After the mass is ready, add the soda and stir thoroughly again (NO need to extinguish the soda)
Step 5:
Heat the frying pan with oil well. Put the dough in a frying pan with a tablespoon and fry the pancakes on both sides until golden brown.
Step 6:
Pancakes are best fried over medium heat so that they have time to bake. And for flipping pancakes, it is convenient to additionally use a fork to support them, then the oil will not be sprayed on the stove.

You can also add peeled and grated apples to pancakes (for this, the number of ingredients is 500 g (not peeled)), only in this case you will need to add a little more flour.
