Fluffy Kefir Pancakes (No Yeast)

Right at the very last moment, just before you start frying, you stir in the baking soda and the batter turns so airy it's almost like a sponge-cake batter — you'd swear it's about to float right up out of the bowl and leave you pancake-less!

    Gather your ingredients. Stir the kefir together with the water and warm it slightly. In the bowl you'll mix the batter in, combine the salt, sugar, and eggs and whisk together.

    Pour in the warm kefir. Whisk thoroughly until foam forms on the surface.

    Now add the flour. Add it gradually — it's easier to mix that way. Whisk well so there are no lumps; a whisk works great for blending quickly and breaking up any lumps.

    IMPORTANT: The batter should be thick — it shouldn't run off the spoon but drop off in a slow, ropy stream. If it's too thin, add more flour until it thickens up. Once the batter is ready, stir in the baking soda and mix well again (no need to slake the soda with vinegar).

    Heat the oil in the skillet until good and hot. Spoon the batter into the pan with a tablespoon and fry the pancakes on both sides until golden brown.

    Fry over medium heat so the pancakes have time to cook through. A fork is handy for steadying each pancake as you flip it, which keeps the oil from splattering across the stove.
