Baked Ground Beef Casserole with Cheese and Sour Cream

  • Start by prepping your ingredients: thaw the ground meat if needed; peel the onion and garlic, then finely dice the onion and grate the garlic on a fine grater; grate the hard cheese; cut the bacon into small pieces; and dice the pickles small (you can leave them out entirely or add more — go by your own taste, but they add a nice tang; other pickled things, like mushrooms, work well too). Preheat the oven to 350°F (180°C). Set a large skillet over medium heat and warm it with a little vegetable oil. Add the ground meat and break it into small pieces with a spatula. Add the diced onion, grated garlic, dry spices, salt, and ground black pepper (freshly ground is ideal). Stir and fry for a couple of minutes, then pour in the Worcestershire sauce. Cook everything together for 8–10 minutes, then take the skillet off the heat. In a medium bowl, mix the lightly beaten eggs with half of the grated cheese, the sour cream, and the mustard, stirring until smooth. Grease a baking dish with vegetable oil and spread the meat mixture from the skillet into it. Scatter the bacon and pickles over the meat, then pour the egg mixture on top. Finish with a final layer of the remaining grated cheese. Bake for 15–20 minutes, until the cheese is bubbling. Serve hot. Enjoy!
