How to Cook Squid for Salad So It's Tender

    1. Start with the squid bodies. They're sold frozen, so the first thing to do is thaw them properly. First, put the frozen squid in the refrigerator for 6 hours (at 5 degrees). Then move them to the counter to finish thawing at room temperature. This way they'll keep the most nutrients. 2. Now clean the squid. First, remove the thick pink skin. Then remove a second thin, transparent membrane, and take out all the insides. I recommend using hot water — the skin will then slip off very easily, like a stocking. Note that there's also a membrane on the inside of the squid body. 3. Now move on to cooking. First, bring the water to a boil and salt it. As soon as the water boils, lower the squid in one at a time. You only need to cook each one for 15 seconds. Be aware that if you overcook squid, it turns rubbery as a boot — and to make it tender again you'd have to cook it for another 2 hours. 4. Take out the squid and drain off the water. Wait for them to cool. Slice the bodies into rings with a knife. 5. I recommend drizzling the seafood with lemon juice. If you're squeezing the juice straight from a lemon, wash it in hot water first so it releases more juice. Or you can use store-bought juice. 6. Add pepper to the squid. Any kind will work, from black to white (it also pairs well with red). A blend of peppers is a great idea. 7. These rings make a great appetizer. You can eat them warm or cold, and they're often served with salad. 8. Enjoy your meal.
